Looking for some champagne recommendations

I enjoy wine and know/ have tried many different wines but I’m not very knowledgeable about champagne.

I prefer a Riesling when drinking white wine and a Cabernet Sauvignon in red. I know that A champagne is typically white and that I would prefer something closer to a Demi-sec but anything more along the lines of a dessert wine and less dry would be ideal.

I’ll be enjoying it with someone who doesn’t enjoy dryer wines (or much wine in general) although I’m happy either way. I would also be open to any sparkling wines.
