Mediocre to best or best to mediocre, how do you pace wines for a dinner party?

If you have 3 bottles you plan to open over the evening, all reds of similar varieties, do you start with the best and work down or start at the bottom and take the evening to your best bottle? I’m inclined to start with the best since by the time I hit the “worst” I’ll be sufficiently sauced. Wondering how others do it?
