Labelling/marketing rules around Chablis…

I was wondering what the rules were around labelling a wine ‘Chablis’. Can one only use the term for still wine?
I’ve noticed a few crémant producers in Chablis called their wine Crémant de Bourgogne. I’m surprised they don’t call it Sparkling Chablis, because I assume the intrigue alone would sell it like hot cakes.
It seems absurd, that a wine from Chablis, using the correct grapes, can’t be labelled as such.
The closest one or two dare to go is ‘sparkling wine from Chablis’.
Anyone know the legal specifics? Is it against the law, or is it just that they don’t want to use such a label?
