Wine Pairing Advice for 3 separate meals: Beet Couscous & Goat Cheese || Eggplant Pepper Zucchini Curry (Thai) || Sausage Sweet Potato Broccoli Sheet Pan

I am looking for some ideas for wine pairing for three different evenings and meals and was wondering what you guys could come up with:

The first is a Beet Couscous & Goat Cheese. Might add some parmesan crisps. Recipe(s) on which it is based, to give an idea: https://www.agourmetfoodblog.com/pearl-couscous-with-beets/#wprm-recipe-container-7452 Given that it has goat cheese, a solid bet could be a Loire Sauvignon Blanc but.... I'm out! I do have a light White Burgundy (Joseph Drouhin Laforet Bourgogne Chardonnay) which could stand in given it is lightly oaked and a bit buttery.

The second meal is a Eggplant Pepper Zucchini Curry (Thai), will probably add some lentils to add a protein source. A Gewurztraminer from Alsace could add a tropical & spicey touch perhaps.
