How much wine does a winery keep in its cellars v. sold and distributed?

As we all know the best place to buy and try wine is straight from the domain. So let's say they produce 100,000 cases of wine in a year. How many bottles would a winery keep on site to either sell later, keep for tastings, keep for their own records, etc v. how much of their total production is sold and distributed?
