Where to go around Bordeaux?

I'd like to spend a week in and near Bordeaux to work on my French as well as visit a couple of vineyards and other interesting, historical places. I'm happy to take longer trips and even spend a night somewhere. What do you say, how long should I spend there? Are there any vineyards that I could visit?
