It’s my dads birthday tomorrow and I’m cooking for him. He’s been really into wine for decades and really knows his shit, and while he taught me the basics when I was growing up I’m not great at pairing with specific foods so need a hand.
I’m cooking miso salmon, mushroom and pancetta risotto, and roasted brussel sprouts. I figured a white wine, but I’m open to anything. I want something good and I don’t mind paying a bit for it but I’d rather keep the price somewhat reasonable.
For 15 years, Athan Zafirov has traveled the vineyards around the world and worked with some of the greatest chefs including Francois Duc and Alan Brown.
