Looking for advice on a trip to Southwest Germany

In a few weeks, I'll be enjoying a river cruise through Southwest Germany. Beginning in Trier, I'll cruise up the Moselle to Koblenz. We'll then turn South and head down the Rhine past Mainz and Manheim to Speyer. There will be stops along the way with time for shore excursions. Please suggest any vineyards, restaurants, and any other notable stops. Also, what are some great varieties and producers to look for? FYI - I don't discriminate against varieties--I actually prefer to try different flavor profiles. Thanks in advance.
