Most Educational Vineyard Tours

Hi, sorry to ask another vineyard tour question, I'm sure you get lots. I tried looking this up though and couldn't really find someone asking exactly what I'm looking for:

Me and my SO are visiting Napa in late march, and we're hoping to do a day touring vineyards, ideally one in the morning and one in the afternoon. We wanna stop at Gott's for lunch, so preference would be for vineyards in the St. Helena / Yountville area.

We're both pretty inexperienced when it comes to wine - my gf really likes sauvignon blanc, and doesn't really like Chadonnay that much, I like any wine as long as its not too sweet. We generally drink white wines since we don't eat meat.

As such, we're hoping to do a longer morning tour where we can learn a bunch about wine, the history of the vineyard, and try a few things. We really want to educate ourselves here, so we're looking for the most informational tour - maybe a private one where we can ask a lot of questions would be nice?

In the afternoon, we're hoping that we can leverage the learnings from our first tour to appreciate a more fancy tour - we'd like to try some interesting vintages or learn about cool techniques, as well as maybe be in a more scenic / romantic environment.

Our budget for the day is 250 a head max, but preferably more in the 200 range. As far as what I've researched so far, I was leaning towards doing something like Cakebread in the morning, and Faust or Quintessa in the afternoon, but I'm having second thoughts since I saw some posts saying these were tourist traps (for Cakebread) or not good wines to be had without food (in the case of Faust and Quintessa). Any help would be greatly appreciated! Thank you
