Favorite non-steak pairings for cabs/LB bdx?

Been drinking mostly Pinots, Rhones, Champagne, and other whites lately. I have a few bottles of cabs and bordeaux stacking up I'd like to open, but haven't really been in the mood for a heavy steak.

Lamb comes to mind, but I tend to prefer rhones/syrahs with lamb. Similarly pinots/burgs for duck or chicken.

What would you make for, say a 2014 Pride CS, a 2005 Spring Mountain CS, or a 2014 (unclass) Pauillac?
