Last minute trip to Burgundy - one full day there - recommendations?

I'll have a full day and one evening in Burgundy. I assume most tours will be booked. What are the special towns, vineyards or restaurants (not too fancy) I could visit w/o a reservation? Beaune, Pouligny-Montrachet...? Thanks for any ideas!
