Could use some help with pairing this menu

Helloo all!

I wonder if it's possible to get some wine pairing suggestions for this menu I'm about to cook in 2 weeks time. As this menu has hints of asian flavours, i'm struggling with the correct pairings. Could you help me out? Thanks in advance. And I'm European, if that means any :)

Course 1: Oyster 4 ways
- Red wine vinegar, shallot
- Champagne Beurre Blanc
- Yuzu
- Balinese dressing

Course 2: Fowl rouleau with yellow dal and Spinach

Course 3: Red onion tarte tatin with yoghurt and garam masala

Course 4: Palate cleanser (still have to decide, open for suggestions)

Course 5: Confit pork belly with bok choy and toasted garlic

Course 6: Caramel Sous vide pineapple with peppercorns and a passion fruit sorbet

Course 7: Because I'm partly Dutch: Cheese with figs and different chutneys
