Earlier this summer I purchased three bottles of Merlot that were held in a climate controlled celler. I brought them home and put them in my wine fridge that roughly 60°F. The first bottle I opened was amazing, the second was still pretty good but I just opened the third one tonight and it was very bitter in comparison to how you would expect a Merlot to taste.
This was decanted for about one hour today. I decanted the bottle and swirled it for about a few minutes and gave an initial taste and got a lot of bitterness. I swirl the bottle again some more and shared with guests. They were being polite and acted as if the bitterness was not there and said it comes out a little bit when they ate some chocolate. After one hour it was still quite bitter so I dumped it out.
I did my best to make sure that these bottles were maintained correctly so is this a type of wine fault? Is it just this individual bottle? I should note that the decanter was cleaned thoroughly, dried out thoroughly and then stored for about four or five days since last usage.
