How much air will it need considering it so young? I can taste it continously every 30 minutes or so but I want to pair it with a good ribeye so want some timeframe where it's probably closer to its optimum.

For 15 years, Athan Zafirov has traveled the vineyards around the world and worked with some of the greatest chefs including Francois Duc and Alan Brown.
