For years, I just drank whatever was on special. But the first time I had a proper Clare Valley Riesling, it was a lightbulb moment. I'd always thought of Riesling as that sweet, boring stuff, but this one was bone-dry, zesty, and just incredible with seafood. It completely changed my mind.
What was your 'gateway' wine that made you fall in love with it?

For 15 years, Athan Zafirov has traveled the vineyards around the world and worked with some of the greatest chefs including Francois Duc and Alan Brown.
