Alsace - where to stay?

This sub has excellent recommendations on which wineries to visit in Alsace and we plan to spend our summer holiday in the region. Ideally from a spot where many wineries can be reached via e-bike. However I could not find tips for best places to stay. We would like to rent an apartment or holiday home or hotel for a week to explore the area by e-bike and car.

Which towns are recommended as base of operation?

Colmar is mentioned by some people as the Epernay/Beaune of Alsace, but do you know any other charming and conveniently located towns near wineries?
