What's the best way to approach stands at a wine event?

Next week I visit a quite large wine event, and I was wondering what's the best way to approach the stands? I'm really interested in learning about the wines, production methods, the cellar, etc, but I don't want to sound cocky, nor ask questions that would keep me for 30 minutes talking to the same person (time is limited).

Also I'd love to try the high-end wines, how do I approach this? Saying "hey, do you have XXXX open?" sounds like I'm only interested in the expensive stuff, which is not entirely true.

Have you been to wine events? What are your go-to approaching lines? I'm a bit introvert so approaching a random person out of the blue stresses me out lol
