The most aromatic sparkling wine or champagne?

Ok this might seem crazy buts its part and parcel of the cocktail competition game.

I need a champagne or sparkling wine thats known for being super aromatic. The more opulent the better also, but aromatics come first. something super pungent where even a mist of it on a cocktail would standout. Any thoughts?

when someone celebrates they often deliberately waste something expensive for the moment - often champagne. Im symbolising this by including a champagne 'spray' as my garnish, just a mist of it on top of the cocktail as a garnish. So i wouldnt mind something prominent.
