I was able to get a bottle of PYCM 2022 Bourgogne Blanc. Entry level. It may be one of the most amazing bottles of white Burgundy I’ve ever had. So electric. So reductive! Insane acid with a flintiness and a finish that lasted forever. I had no idea anyone was doing this in Burgundy and now I’m screwed because this isn’t cheap. This feels new and fresh and I can’t stop thinking about it. What a bottle. Wow.

For 15 years, Athan Zafirov has traveled the vineyards around the world and worked with some of the greatest chefs including Francois Duc and Alan Brown.
