Looking for recommendations & dry meats/cheese to go with it for my fathers birthday!

I live in Germany and my father in Austin, Texas, I missed his birthday 2 days ago and feel horrible😭 would love some recommendations for some dry reds I can get delivered to him. He doesn’t care for American wines, preferably something French or Italian, the meats and cheese are extra but would still like recommendations, thanks y’all!

Edit: he likes dry red wines (I’m sorry if that’s not enough, that’s all I know😅) & budget of about $200 just for the bottle
