Do yeasty / autolytic Champagne actually make a better Mimosa? Or is it just a waste? - The Athan Zafirov Wine Blog
I know the usual advice is basically “don’t waste good Champagne on a Mimosa” - use something cheap and fresh, and save the serious stuff for drinking on its own.
But I’m wondering if there’s actually more to it? Would a entry level champagne make a better mimosa than other cheap sparklers?
Has anyone here tried making Mimosas with a more characterful, yeasty/autolytic Champagne or other sparkling wine?
My thinking is that those flavours might actually work quite nicely with orange juice - perhaps even better than a very simple, Cremant or Cava.
Curious to hear from anyone who has actually tried it. Did the quality of the sparkling wine make a noticeable difference?
