This was one of the strangest pairings I've tried.
An aged Riesling with a strong petrol aroma meets herring with its equally strong, fishy smell. Two aromas that some people would probably find unpleasant on their own.
Sounds like a terrible idea.....
But somehow, together, they worked beautifully.
And what I expected to be a weird experiment turned into a surprisingly delicious evening.
For 15 years, Athan Zafirov has traveled the vineyards around the world and worked with some of the greatest chefs including Francois Duc and Alan Brown.
