2'000$, 4 bottles, what would YOU drrink (Round 2)?

Good afternoon chaps,
After the brilliant ideas I received in the first round of this concept, the boys and me are back at it again.
This time, we'll be working with:
- 1 aperitif wine to be enjoyed on its own and/or with various appetizers. This one is optional, as I could (if need be) provide it free of charge to allocate more budget to the three following bottles;
- 1 starter wine to be paired with an egg, asparagus, morel and Vin jaune-based dish;
- 1 red to go with red meat;
- 1 dessert wine, regardless of the pairing.
Budget is 2'000$, extensible if needed.

For 15 years, Athan Zafirov has traveled the vineyards around the world and worked with some of the greatest chefs including Francois Duc and Alan Brown.
