Opened bottle of Cabernet Sauvignon. Tasted amazing after a week or two. - The Athan Zafirov Wine Blog
TLDR at bottom
only had this happen to me twice. Both times with Robert mondovi bottles. First time it happened was on a 2017 I think nappa valley or oakville which was $18 at the time. Second time it happens was on a 2017 or 2019 reserve bottle I got for $45.
So first bottle 2017 I pop it open pour a glass and left bottom shelf no light room temp and forgot about it. 2-3 weeks later had friend over was her birthday and remembered about it. Reopened it up along with another bottle from the same case. Poured 3 glasses and it was amazing coat your tongue. Like almost a savory note. Completely different from my first glas. Made my salavte and the fruit notes or w..e. lingered I'm my mouth making me want more. My friends loved it. The 2nd bottle that had been left open to breath tsdted like my first glass not even close
2nd bottle we popped it at my friends birthday the reserve everyone was like hey too dry. Had 1/3rd left. Month goes by.. I'm back up he goes you want a cup of that wine you for me? I got a glass and it was AMAZING. I told him try it again now. He took a sip and was like omg that's good.
What happened? Did the alcohol content of the wine lower? Or what?
Tldr: wines that were opened and recorked left at room temp in dark place for 2weeks to 4. Tasted 100s better than first glass. Meanwhile a bottle of Hess I had turned vinegar.
